An olive oil is considered extra virgin when it is obtained from olives that following a mechanical procedure that does not alter the varieties of the oil, using healthy olives collected at the optimal moment of maturity. All those single-variety oils have been produced using only one type of olive, while those coupage have used two or more types of olive.
